Gary Hinegardner
“The Agronomist”
Gary Hinegardner, owner and founder of Wood Hat Spirits, frequently challenges visitors at his distillery with a compelling question: “Why do we make whiskey from the same corn that cows and pigs eat?” He then offers his own answer: “We should be making whiskey from corn meant for people – better yet create a corn just for whiskey.” This perspective embodies his forward-thinking approach and steadfast commitment to both agriculture and whiskey artistry. With a lifelong connection to farming and a background in agronomy, Hinegardner has seamlessly blended his expertise in corn cultivation with his craftsmanship as a woodturner to create one of the most unique distilleries in the United States. His transition from agronomist to distillery founder has left a lasting impact on the whiskey industry, establishing Wood Hat Spirits as a pioneer in sustainable, high-quality whiskey production.
Born in Winfield, Kansas, and raised in Neosho, Missouri, Hinegardner was introduced to sustainable practices early on through his father’s work in the timber industry. He pursued his education at College of the Ozarks, the University of Arkansas, and Southwest Missouri State University, majoring in science—a foundation that would shape his future in agriculture and distilling.
Hinegardner’s early career focused on agricultural development and education. He dedicated five years to the Peace Corps, including three in India during the Green Revolution, where he both taught and learned advanced farming techniques to improve crop yields. One of his most impactful contributions was introducing sprinkler irrigation, a method that significantly enhanced agricultural efficiency in the region.
After returning to the United States, he earned a master’s degree in agronomy from the University of Illinois. He then moved to Missouri, working as an agronomist for the University of Missouri Extension before managing a local farmer’s cooperative in New Florence. Later, he developed and managed Missouri Mulch, a division of Independent Stave Company. During this time, he noticed vast quantities of Missouri-grown corn, white oak staves, and barrels being exported for distilling elsewhere—an observation that ultimately inspired the creation of Wood Hat Spirits.
In 2011, Hinegardner took a bold step in founding his distillery, naming it after his unique craft of hand-turning wooden hats on a lathe—a skill he learned from concept creator Johannes Michelsen. Dedicated to sustainability and quality, he established a true seed-to-glass distillery, utilizing heirloom corn varieties, eventually breeding his own, and operating the only commercial wood-fired distillery in the United States. Inspired by Scotch whiskey production, he embraced traditional techniques while ensuring an economically sustainable approach.
Under Hinegardner’s leadership, Wood Hat Spirits has earned widespread recognition in the whiskey industry, securing numerous awards. A key distinction from competitors is the distillery’s use of a straightforward two-grain mash bill of 75% corn and 25% wheat, intentionally forgoing the traditional inclusion of rye or malted barley. His pioneering techniques and commitment to exceptional flavor have positioned Wood Hat Spirits as a standout in the market.
Like any pioneering venture, Wood Hat Spirits has faced challenges, from economic fluctuations like COVID and legal complexities to growing industry competition. Yet, opportunities such as the passage of House Bill 266, which defined Missouri Bourbon, have also emerged. Through it all, Hinegardner’s perseverance and deep expertise in both agriculture and distilling have enabled him to navigate these obstacles, ensuring the distillery’s continued success.
Beyond crafting exceptional whiskey, Hinegardner has made a lasting mark on the industry through his pioneering work in corn genetics, breeding and developing his own varietals to enhance flavor and sustainability. In 2024, the American Distilling Institute’s International Spirits Competition recognized his achievements by naming him Top Spirits Influencer, highlighting his profound influence on the industry. That same year, Wood Hat Spirits introduced Wood Hat Orange #8 (WHO-8), a groundbreaking corn variety specifically developed for bourbon production.
Gary Hinegardner’s journey from agronomist to whiskey distiller is a testament to the seamless fusion of science, craftsmanship, and innovation. His deep agricultural expertise and passion for distilling have led to the creation of some of the most distinctive and high-quality whiskeys available. Beyond Wood Hat Spirits, his influence is shaping the future of whiskey production using both unique corn varieties and traditional methods. As his legacy continues to grow, whiskey enthusiasts and industry professionals alike can appreciate the dedication and artistry behind his work. Whether visiting Wood Hat Spirits or savoring a sip of his carefully crafted whiskey, one experiences the true depth of his impact on the world of spirits.
